Miao Sour Fish

Sour Fish is a famous dish of the Miao people in Fenghuang. To make the dish, you coat small fish with rice flour (put some salt in the rice flour) and put it into jars for three to five days until the fish have a sour flavor. Fry these sour fish with tea-seed oil or other plant oils till they turn golden, and now they taste not only sour and fragrant but also very delicious. Since the sour fish are pickled with salt for a long time, they can even be directly eaten when taken from the jar.
